Healthy Vegan Chocolate Chip Mint Ice Cream
If you’re late to the “nice” cream bandwagon like me, don’t feel bad – just break out the food processor and whip up this healthy treat!
I am seriously kicking myself for not making banana ice cream sooner. I love ice cream, but I don’t love bananas so I always kind of avoided it. I was craving a sweet treat the other night and I had a few frozen bananas in the freezer, so hey why not. And I was pretty desperate, not gonna lie.
Enter this soft, creamy deliciousness that I whipped up in two minutes. I added cacao powder and chocolate chips which was the perfect way to mask the banana flavor.
Then I broke out my peppermint essential oil and WOW, I had literally recreated one of my childhood favorites (minus the offensive green color!)
The best part about this nice cream is you can totally customize it depending on which ice cream flavors you love. Nuts or a nut butter, cut-up brownies, and cookie dough would all be an amazing addition- whatever floats your boat!
The key to nice cream is to always make sure you have frozen bananas in your fridge. If you’re a smoothie junkie like me, that won’t be a problem. If you’re not, then buy some bananas, let them get really ripe and pop them in the freezer.
The best part about nice cream is it’s actually healthy. Bananas are full of fiber and a great source of potassium. They are super sweet too which makes them perfect for this tasty treat. Cacao powder is a serious superfood, really really high in antioxidants and full of magnesium. Dark Chocolate Chips give the nice cream that little crunch and dark chocolate is another powerful source of antioxidants (gotta love that cacao!). Peppermint Essential Oil is amazing for digestion and it will even make your breath smell good!
Here are a few tips when making nice cream:
- Freeze your bananas in halves and then slice them up prior to making nice cream. That way you know how many bananas you are actually using.
- If you like really soft and creamy ice cream, let your bananas sit on the counter for a few minutes before processing.
- Go easy on the sweetener at first, you can always add more. Bananas are pretty sweet to begin with and you might not even need to add additional sweetener.
- Don’t give up! If you ready to turn the food processor off because your nice cream is chunky and you don’t think it will ever get smooth – keep going! Creamy goodness is just seconds away.
- Be prepared to eat your nice cream straight from the food processor. It’s that good.

Healthy Vegan Chocolate Chip Mint Ice Cream

- 3 Frozen Bananas
- 1 Tbs Cacao Powder
- 1 tsp Monkfruit Sweetner any sweetener will do
- 1/4 cup Chocolate Chips dark, non-dairy
- 1 drop Peppermint Essential Oil make sure it's safe to ingest
Ingredients

- Cut up the frozen bananas into 1/2 inch thick pieces and add them to your food processor along with the cacao and sweetener. Process for about 1-2 minutes until mostly smooth. Add in the chocolate chips and peppermint oil and process for another 30 seconds. Done! Enjoy straight from the food processor (like me) or pour it into two bowls and add your favorite toppings. You can also freeze it for a few hours if you prefer hard ice cream. Enjoy!
